Since we moved to Huahua Farm we have been delighted to discover various tropical plants growing on the property. One of the most interesting is a vine with green orchids - a vanilla orchid! We have nurtured and multiplied the vine, learned how to pollinate and cure the wonderfully fragrant beans and now offer them for sale.

MAY 2014 NEW CROP OF VANILLA BEANS READY TO SELL.
Once again the crop is small. However we did finish planting a total of 20 new vanilla vines which should be producing vanilla beans in 2015. An irrigation system was also installed to help alleviate the drought conditions which have caused the low production.
November 2013 Sold out of this year's vanilla bean crop. In August, one hundred of the beans were sold to the Hawaii Food and Wine Festival - a gourmet event on Oahu featuring many well-known chefs from around the world using ingredients sourced here in Hawaii - every thing from grass fed beef to vanilla beans.
Selling most of the vanilla beans so early in the year prompted Phil and me to design an extension to the vanilla shade house. It is nearly complete and 12 new vines were planted yesterday. I'll post pictures soon.

HOMEMADE VANILLA EXTRACT
Split two vanilla beans lengthwise. Place in a bottle containing one cup of vodka. Store in a cool, dark place for at least four weeks. Shake the bottle a few times a week. You can leave the beans in the extract to let it get more intensely flavored, or remove the vanilla beans and use them in other recipes.

You can flavor your morning coffee by chopping up an inch of vanilla bean and putting it with the coffee grounds when you prepare your coffee.

Vanilla beans or vanilla extract also add great flavor to salad dressings.
